Apricot Honey Oatmeal

If warm oatmeal takes too much time or has you sweating this time of year, make the oatmeal the night before and toss it in the refrigerator. You'll have a great overnight oatmeal in the morning that is grab-and-go ready.

Apricot Honey Oatmeal

Ingredients:

  • 1/2 cup old fashioned oats, uncooked
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon ground flax seed
  • 1 cup of water or milk
  • 1/2 tablespoon honey
  • 1/2 teaspoon vanilla
  • Pinch of salt
  • 1/2 apricot, sliced

Directions:

  1. In a microwavable-safe bowl, combine all the ingredients together, except for the apricots
  2. Microwave for 2 minutes, stirring occasionally, until most of liquid is absorbed
  3. Top with sliced apricots
  4. Enjoy now, or toss it in the refrigerator for the next morning
