Green Bean and Rice Casserole

Makes 6 servings
Ingredients:
- ½ cup onion (chopped)
- 2 tsp. vegetable oil
- ½ cup rice (uncooked)
- 15-oz. can low-sodium green beans (drained)
- 15-oz. can low-sodium diced tomatoes
- 1 cup water
Directions:
- In a medium-sized pan, cook the onions in vegetable oil until they start to turn light brown.
- Add the rice, green beans, tomatoes and water.
- Bring to a boil.
- Cover the pot with a lid and cook over low heat for 10 minutes.
