Game Day BBQ

Take your tailgate to the next level with this easy BBQ pork!

Ingredients:

 

1 pound pork tenderloin

1/2 cup of your favorite BBQ sauce

2 1/2 cups packaged cabbage and carrot coleslaw

2 1/2 tablespoons sour cream

1 1/2 tablespoons mayonnaise

1 1/2 teaspoons sugar

2 1/2 teaspoons prepared horseradish (optional)

Cooking spray

Whole grain wraps to serve

 

Directions:

  1. Trim fat from the pork and cut in half lengthwise.  Brush pork with 3 tablespoons of BBQ sauce.  Coat a broiler pan with cooking spray, then place pork on pan and broil for 15 minutes or until thermometer registers 155°.  Turn occasionally while cooking, and then cut in 1/4 inch thick slices
  2. While pork is cooking, combine coleslaw, sour cream, mayonnaise, and sugar in a medium bowl.  Put off to the side.
  3. Combine the pork with remaining BBQ sauce.  Serve in wraps and top with coleslaw
