Confetti Grain Salad

Makes 6 servings
Ingredients:
- 1 ½ cups brown rice (uncooked)
- 3 cups water
- 2 lemons (juiced)
- 3 green onions
- ¼ cup fresh parsley (minced)
- ½ tsp. salt
- 1 dash black pepper
- ¼ cup olive oil
- 1 ½ cups mixed vegetables (cut into small pieces)
Directions:
- Wash the rice and put it into a 2-quart pot with water. Bring it to a boil, lower heat to simmer and cook uncovered until all the water is absorbed. This should take approximately 45 minutes.
- Pour it into a medium-sized bowl and allow it to cool.
- Pour the lemon juice over the rice and stir. When the rice is cooled to lukewarm, add the vegetables, salt, black pepper and oil.
- Stir and chill for at least 1 hour. This dish also can be served warm.
