Mediterranean Chicken and White Bean Salad

Mediterranean Chicken and White Bean Salad Thumbnail

Makes: 4 servings

Ingredients:

  • 1 cup skinless cooked chicken (diced 
    into ½-inch pieces)

  • 15.5 oz. can low-sodium white beans 
    (drained, rinsed with cold water)

  • 1 cucumber (peeled, diced into ½-inch 
    pieces)

  • ¼ red or white onion (peeled, chopped 
    into ½-inch pieces)

  • 2 Tbsp. vegetable oil

  • ¼ cup lemon juice

  • 1 Tbsp. dried basil or parsley leaves

  • ¼ tsp. salt

  • ¼ tsp. black pepper

Directions:

  1. Cook chicken until it reaches an internal temp of 165 degrees or use pre-cooked chicken like a rotisserie chicken or frozen fully cooked chicken.
  2. Dice chicken into 1/2 in pieces.
  3. Drain and rinse white beans.
  4. Peel and dice cucumber. 
  5. Peel and chop onion. 
  6. Put all ingredients in the bowl and gently toss.
  7. Serve it immediately, or cover and refrigerate for up to two days.
